The bananas I purchased the other day on one of my extreme couponing canada shopping trips, were finally ripe enough for baking! So today I set aside an hour to make a couple of loaves. Banana bread is my all time favorite thing to bake because it’s so simple and is great for a snack or a quick breakfast. After experimenting with the ingredients my first few times, I found the perfect amounts for the ideal moisture and sweetness, which I’ll share with you here. You don’t need a mixer for this recipe, so you’ll likely be able to make it with things you already have around the house!  I made 2 loaves, so I just doubled all the ingredients.

You’ll need:

Large mixing bowl
Potato masher (or fork)
Rubber spatula

Wooden spoon

Measuring cups/spoons


4 bananas mashed, refer to photo, yum
1 egg, beaten
1/3 cup melted butter
3/4 cup sugar
1 teaspoon baking soda
1 teaspoon vanilla
pinch of salt
1 1/2 cups all purpose flour

  1. Preheat oven to 350°F (175°C) and grease the loaf pan
  2. Using wooden spoon, combine butter and mashed bananas in a large mixing bowl
  3. Add sugar, egg, vanilla and mix
  4. Sprinkle baking soda and salt over top and mix in
  5. Add the flour and mix
  6. Pour into greased 4″ by 8″ loaf pan
  7. Bake for 50-60 minutes
  8. Cool on rack and remove from pan
  9. Slice and enjoy!

In additional to being very easy to make, this banana bread was also very cheap to make! In my previous post I purchased 11 bananas for $0.99 and used 8 of them for 2 loaves of bread. Sugar and butter I always purchase from SDM on 20x points or redemption days and the flour was $2.99 (after coupon) for a 5kg sack. A loaf of banana bread costs $1.95 + tax from Starbucks. All in all, this recipe probably cost me about $1.50 total to make 2 loaves of banana bread which goes to show that extreme couponing canada principles can be applied to how we bake as well!


  1. I buy my bananas in the discount section of the produce department for extreme savings..they are usually really really ripe. I than bring them home and freeze them in a grocery bag/freezer bag peel and all for later use. Just take 3 out of freezer thaw in microwave for about a minute and the peel just falls off….”meat” is already mushy and easy to blend in with rest of ingredients..my kids really like me to make “smookies” — i drop an icecream scoop of badder on cookie sheet just like a cookie — makes for a great bread like moist cookie!
